Smoothies are my go-to nutrient source in the morning!

 

There is something so gratifying about knocking out several servings of veggies in one blend! Last year I experimented with a pumpkin smoothie and it didn’t go so well. The recipe called for pumpkin pie filling and maple syrup. Big nope!

This year I decided to go rogue and concocted a healthy pumpkin smoothie that also happens to be D-E-L-I-C-I-O-U-S! If you’re not already used to mixing veggies in your smoothie, then this might be a little stretch for you … it’s certainly no Starbucks “pumpkin spice.” This cocktail is full of antioxidants, vitamins, and minerals.

 

What you’ll need:

 

(Makes 1 serving)

½ cup pumpkin pie purée (from the can is fine!)

½ tsp. cinnamon

½ banana

1 tbsp. chia seeds

2 cups frozen “winter blend” (broccoli and cauliflower)

2 tbsp. almond butter

1 ½ cup almond milk

 

 

How to make the magic happen:

 

Put it all in a blender and blend! Serve in a stemless wine glass or a mason jar! Sprinkle with a ‘lil coconut, pepitas, or cacao nibs!
