Did someone say Taco FriYAY!?!? Yes! I did!

I liked Taco Tuesday a lot better when I was in college. These days, I like to savor one of my favorite foods (tacos) for Fridays!

I have landed on the perfect healthy Taco night game plan and it’s too good not to share.

As we all know, one of the best things about Tacos is that they’re very easy to modify based on allergy or dietary preference. That said, I’ve always had a hard time finding decent gluten-free taco shells or a good dairy-free substitute for sour cream … until recently!

This recipe includes “The Best Damn Vegan Sour Cream” by Savanna and the easiest “Cilantro Lime Chicken” slow cooker tacos by Ashlyn! Not a fan of the chicken? Substitute it for cauliflower or sweet potatoes!

 

What you’ll need:

 

Shells

 

The Best Damn Vegan Sour Cream

  • 1 cup raw cashews, soaked overnight
  • ¼ cup + 2 Tbsp fresh lemon juice
  • ¼ tsp sea salt
  • 1 tsp nutritional yeast
  • ½ cup water

 

Cilantro Lime Chicken

  • 2 pounds skinless, boneless chicken breasts, (fresh or frozen)
  • Taco seasoning (I love to make my own!)
  • 1 16 oz jar salsa  (I love this smoky chipotle salsa from Thrive)
  • 1/3 cup chopped fresh cilantro (if you don’t have this on hand, dried is pretty good, too!)
  • Juice from two limes

 

 

How to make the magic happen:

 

The Best Damn Vegan Sour Cream:

  1. Place all ingredients into your blender (I used my food processor
  2. Blend on high for 5-7 minutes until very smooth and creamy.
  3. Transfer to a mason jar or other airtight container (I recommend keeping in the fridge for 30-60 minutes for it to thicken and chill)

 

Cilantro Lime Chicken

  1. Place chicken breasts in the bottom of your slow cooker. Sprinkle taco seasoning over the top, then cover with salsa, lime juice, and cilantro.
  2. Place lid on top and cook for four hours on high, or 6-7 hours on low. Remove chicken from crockpot to a separate bowl and shred with two forks. Moisten chicken with small amounts of juice leftover from the crockpot until you get the amount of moisture that you like.
  3. Serve with taco shells or lettuce wraps, pile on that delicious vegan sour cream, and cover with your favorite toppings! I love guac, jalepeños, chili peppers, corn, tomatoes, lettuce, fresh cilantro!

 

Enjoy with a Mojito Kevita for an alcohol-free kick!
