I’ve gotten some questions recently about what I recommend for healthy “snacks.”  My first answer is always pre-cut veggies. But there are a few other snacks I prepare each week. I figured Favorite Food FriYAYs would be the perfect place to feature them!

Today’s roasted chickpea recipe is my top favorite snack because of how inexpensive, easy, and quick it is. It is also versatile – which by now you’re probably realizing is a meal prep theme of mine. I throw them in my carry-on for travel days, add them to my trail mix, top my salad with them, sprinkle atop soup, add them to a pile of sprouts on avocado toast, or toss them into my yogurt (Greek yogurt if using curry spices, Vanilla Bean yogurt if I’m using cinnamon)! You do you!

I cannot tell you how many times I bake this snack in the morning while drinking my coffee and enjoying my morning routine (yes – it’s that quick). This is also a great option for busy households with littles running around (yep – kids will eat them too)! These are also my husband’s favorite. He’s a chip guy, so these are a fantastic, healthier replacement.

The only downside – a batch goes quickly! I typically make one savory batch and one sweet batch.

What you’ll need:

2 (15-ounce) cans chickpeas (aka garbanzo beans)

2 tablespoons olive oil

1 1/2 teaspoons salt

You can stop there … or … you can add whatever spices and herbs float your boat! Here are some of my favorites:

How to make the magic happen:

Heat the oven to 400°F.

Drain, rinse, & dry the chickpeas: Pat the chickpeas dry with a towel. You can always leave them out to air-dry for a few minutes.

Using a mixing bowl, toss the chickpeas with olive oil and salt.

Pour the chickpeas out in an even layer on a baking sheet.

Roast the chickpeas for 20 to 30 minutes: Stir/shake chickpeas every 10 minutes or so.

When slightly browned and golden, try one! It should be soft in the middle, crispy on the outside.

Add your spices (yes, after the roasting) and coat evenly.
